Moroccan Chicken Brochettes

Ingredients
- 2 lbs boneless chicken thighs, cut into 2" pieces
- 5 garlic cloves, chopped
- 1/2 C finely chopped Italian parsley
- 2 tsp ground cumin
- 2 tsp paprika
- 1/4 tsp crushed red pepper flakes
- 3 tbsp evoo (or more if needed)
- kosher salt
- fresh mint, for serving

Preparation
Step 1
1. Combine garlic, parsley, cumin, paprika, red pepper flakes and oil in a small bowl.
2. Add seasoning to chicken. Season with salt. Cover and chill at least 2 hours (and up to 2 days, the longer the better).
3. Prepare grill for medium-high heat and oil grate.
4. Thread chicken onto skewers.
5. Grill, turning occasionally, until cooked through, 8 - 12 minutes.
6. Serve with pita bread, tomatoes and mint if desired.
