Ingredients
- 3 cups 100 percent wheat bran
- 1 cup boiling water
- 2 eggs slightly beaten
- 1/2 cup molasses
- 2 cups buttermilk or sour milk
- 1/2 cup vegetable oil
- 1 cup raisins, chopped dates, prunes or other dried fruit
- 1 tablespoon baking soda
- 1/2 tsp salt
- 3/4 cup sugar
- 2/12 cup flour

Step 1
Pour boiling water over the bran in a large bowl, stir to moisten evenly. Allow to cool. Add eggs, molasses, buttermilk, veg oil and dried fruit. Mix well. Stir together soda, salt, sugar and flour. Stir in bran mixture. Store in tightly covered container in the refrigerator for up to five weeks. before making first batch, the batter must ferment overnight so it will; will rise properly. Fill greased muffin tins 2/3 full.
Bake at 400F for 20 to 25 minutes OR microwave on full power for about 3 minutes. Let rest on counter for 5-6 minutes
