Ingredients

  • 12 large cloves
  • 4 tbsp. butter (1/2 stick)
  • 20 large sea scallops
  • 1/4 cup maple syrup
  • 1/4 cup apple cider
  • 1/4 cup dry Champagne
  • 3 tbsp. chopped shallots
  • 3 tbsp. chopped chives
  • Salt and pepper to taste

Preparation

Step 1

Cut garlic lengthwise in half. Then place garlic in saucepan of water and bring to a boil. Drain and set garlic aside.

Melt 2 tbsp. of butter in a heavy skillet over high heat. Add scallops when pan is really hot to sear it. Season with salt and pepper. Saute for about 3 minutes per side. Take out scallops and add garlic, syrup and cider to skillet and boil for 3 minutes until reduced to a glaze.

Add champagne, shallots and chives and boil about 4 minutes. Add remaining butter and whisk until melted. Pour sauce over scallops.
