This is a basic cobbler and any fruit or combination of fruit can be used.

Ingredients

  • 3 Pints of fruit - hulled and quartered- Any fresh fruit or combination is OK. Strawberry/blue berry is good.
  • 1 Cup sugar - divided
  • 1 Tbsp. corn starch
  • 3/4 Cups of flour
  • 1 Tsp. baking powder
  • 1/2 Tsp salt
  • 1 egg
  • 1/4 Cups milk
  • 1/2 Tsp. vanilla
  • 6 Tbsp. butter - melted

Step 1

In a bowl combine the fruit and add 1/3 cup of sugar, corn starch, mix and
set a side for 10 minutes.

In a small bowl mix the dry ingredients, flour-sugar-baking powder-salt & mix well.

In a third large bowl - stir in the egg, milk,vanilla,& melted butter.
to this bowl add the dry ingredients, mix well.

In 6 - 6oz ramekins divide the fruit and top with spoonful's of the batter mix.

Bake - 375 degrees for 25 to 30 minutes. Cool and serve.
