Ingredients
- 4 (6-oz.) boneless skinless chicken breast halves
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Water/oil mixture
- 1/4 cup dry white wine OR low sodium chicken broth
- 1/2 cup half and half
- 2 tablespoons Dijon mustard
- 1 teaspoon dried tarragon

Preparation
Step 1
Sprinkle chicken with salt and pepper. Heat water/oil mixture in a large skillet over medium-high heat; add chicken and saute until cooked through, 10 to 12 minutes, turning once; transfer to a plate and keep warm. Pour wine or broth into hot skillet; cook and stir until reduced by half, about 1 minute. Whisk in half and half, mustard and tarragon until thickened, about 2 minutes. Pour any accumulated chicken juices into the sauce. Right before serving, drizzle cream sauce over chicken.
SERVING SUGGESTION: Steamed red skin potatoes and steamed green and yellow (wax) beans.
GLUTEN FREE: Make sure wine/broth and mustard are gluten free.
