APPLE-MANGO COLESLAW

Ingredients

  • 1/2 cup apples, chopped
  • 1/2 cup mangoes, chopped
  • 1/2 cup purple cabbage, shredded
  • 1/2 cup green cabbage, shredded
  • 1/4 cup mayonnaise
  • 1/4 cup red-wine vinegar
  • 1 tablespoon sugar
  • salt and pepper to taste

Preparation

Step 1

Combine all ingredients; toss until lightly mixed. Refrigerate until serving.

To SERVE
Ladle Cranberry-Kumquat Sauce onto half
the plate. Place 2 cakes on sauce. Scoop
coleslaw into a martini glass and garnish.
