Zuppa de Pesce

Ingredients

  • 1/4 cup olive oil
  • 1 medium onion chopped
  • 2 closers garlic minced
  • 1 can -- 28 ounces -- Italian plum tomatoes
  • 1/4 cup dry white wine
  • 2 tablespoons of fresh cut basil
  • 2 pounds soft flesh fish fillets cut into chunks
  • shredded Parmesan cheese

Preparation

Step 1

Heat oil in sauce pan and then add onion and garlic cook until tender.
Stir in tomatoes, wine and basil and mashed mixture together.
Bring to a boil then reduce to medium simmer for 10 minutes.
Add fish simmer for 10 minutes or until fish flakes with fork.
Sprinkle with shredded cheese.
