Ingredients
- 2 lbs red skin potatoes
- 1/2 lb bacon, sliced and diced
- 1 medium onion chopped
- 1/2 cup cider vinegar
- 1/2 cup beef broth
- 1 tsp sugar
- 1/4 tsp pepper
- 1 egg yolk
- 2 tbsp chopped fresh flat leaf parsley
Preparation
Step 1
1. Place potatoes in large pot so that potatoes are cover, bring to a boil and cook till tender. Drain and peel.
2.Cook bacon in large frying pan til crisp, remove with slotted spoon and drain on paper towel
3. Cook onions in 3 tbsp bacon dripings til tender and golden
4. Add vinegar, beef broth, sugar and salt and pepper , cook till boiling
5. Blend 1/4 cup of hot mixture with egg yolk and blend till smooth
6. Whisk egg yolk mixture into saucepan over low heat till heated through
7. Layer sliced potaoes, bacon and parsley.
8. Add vinegar mixture to potatoes and toss to combine
9. Serve warm or at room temperature
NOTE: I double the recipe for a party
