Ingredients
- 1 large onion chopped
- 2 carrots chopped
- 4 cloves garlic minced
- 1 28 ounce can diced tomatoes
- 2 boxes low sodium chicken broth
- 12 chicken wings
- 1 bag lentils
- cumin
- salt and pepper
- pam cooking spray
Preparation
Step 1
Sautee onions, carrots and garlic in a large pot sprayed with pam for 5-7 minutes. Season with salt, pepper, and cumin at every level. Add tomatoes, and one container of chicken stock. Pour in Lentils, layer in chicken wings, season again heavily as lentils absorb a lot of flavor. Chicken wings should be submerged, if not add more chicken stock. Simmer for approximately 1 1/2 hours. Keep eye on liquid, as lentils absorb, more liquid may need to be added. This is not a soup, just add enough liquid so lentils cook, and wings begin to get extremely tender. Keep cover slightly opened while cooking.
