Ingredients
- 3 cups mixed greens
- 2-3 T. balsamic vinaigrette (make it yourself with 3 parts olive oil, 1 part balsamic and a little salt and pepper)
- 1 red apple, cored and sliced
- 1/4 cup fresh blueberries
- 1/4 cup sliced grape tomatoes (red, yellow, or mix)
- 1/4 cup walnuts
- 2 T. goat cheese
Preparation
Step 1
Toss mixed greens with vinaigrette. Top with apple, blueberries, tomatoes, walnuts, and goat cheese.
Add your favorite protein to make it a meal.
