- 2 cups cooked corn
- 2 cups diced tomatoes
- 2 avocados,peeled and cut into 1/2" cubes
- 6 tbsp finely chopped red onion
- 2 tbsp finely chopped cilantro
- 2 tbsp EVOO
- 1 tbsp lemon juice
- 1 tsp salt
- 1/4 tsp pepper
- 1 jalapeno seeded and diced
