Blueberry Streusel Muffins

Ingredients
- Streusel:
- 1 1/2 stick soft butter
- 1 1/2 cups sugar
- 3 extra large eggs room temp
- 1 1/2 teaspoon vanilla
- 8 oz sour cream
- 1/4 cup milk
- 2 1/2 cups flour
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 half pints blueberries
- 3/4 cup flour
- 1/2 cup light brown sugar
- 1 teaspoon cinnamon
- 4 tablespoons cold butter, diced

Preparation
Step 1
Preheat oven 350*
Cream the butter and sugar until light and fluffy, about 5 minutes. With the mixer on low, add the eggs one at a time, then add vanilla, sour cream and milk.
Sift flour, baking powder and baking soda. Add the flour to the wet batter until just mixed. Fold in the blueberries. Scoop the batter into prepared muffin tins. Bake 25 to 30 minutes.
Streusel Topping
Place all streusel ingredients in a bowl of a food processor and pulse until the butter is small pieces. Rub with fingers until crumbly. Spoon about 1 tablespoon of the streusel on top of each muffin and then bake the muffins as directed.
