- 2 tbsp. Dijon mustard
- 3 egg yolks 1 tbsp. cold water
- 3 tbsp. lemon juice
- 8 tbsp. butter, chilled and diced
- Salt
- Pepper

Step 1
Place all ingredients, except butter, in a heatproof bowl or double boiler. Whisk together and place bowl over large pan containing simmering water. Add butter and beat until sauce thickens. Adjust seasoning and serve hot or cold.
