These dry-roasted nuts deliver a dose of warming spice and mild sweetness that make them a perfect counterpoint to a briny, bracing dirty Martini.

Ingredients
- 5 pounds mixed nuts
- 4 egg whites, whipped until foamy and almost stiff
- 1/2 cup white sugar
- 1/4 cup light brown sugar
- 2 teaspoons ground cinnamon
- 1 1/2 tablespoons cayenne
- 1 1/2 tablespoons salt

Preparation
Step 1
Pre-heat oven to 325 degrees. Mix all ingredients together in a large bowl. Make sure all nuts are coated in egg white.
Pour nut mixture out onto two 13-by-9-inch sheet pans lined with Silpat or parchment paper.
Bake nuts, stirring halfway through, until dry and crisp, 30 minutes. Let cool before serving.
