Ingredients

  • 5 pounds mixed nuts
  • 4 egg whites, whipped until foamy and almost stiff
  • 1/2 cup white sugar
  • 1/4 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 1/2 tablespoons cayenne
  • 1 1/2 tablespoons salt

Preparation

Step 1

Pre-heat oven to 325 degrees. Mix all ingredients together in a large bowl. Make sure all nuts are coated in egg white.

Pour nut mixture out onto two 13-by-9-inch sheet pans lined with Silpat or parchment paper.

Bake nuts, stirring halfway through, until dry and crisp, 30 minutes. Let cool before serving.
