Hot Chocolate Soufflé

Ingredients
- 1 Tbsp. sugar
- 1 c. milk
- 1/2 c. sugar
- 3 Tbsp. flour
- 1/8 tsp. salt
- 3 oz. (3 squares) unsweetened chocolate, coarsely chopped
- 2 Tbsp. butter
- 2 tsp. vanilla
- 6 lg. eggs, separated
- 1/4 tsp. cream of tartar
- confectioners' sugar (for garnish)

Step 1
1. Grease a 6-cup straight-sided soufflé dish. Sprinkle dish evenly with 1 Tbsp. sugar.
2. In a saucepan, mix together milk, 1/2 c. sugar, flour, & salt. Add chocolate. Cook over medium heat, stirring constantly, until chocolate is melted & mixture thickens, ~2 minutes. Remove from heat. Stir in butter & vanilla. Cool completely.
3. Preheat oven to 350ºF. Place in lower third of oven. Remove other racks.
4. Stir egg yolks into chocolate mixture.
5. Beat together egg whites & cream of tartar at high speed until stiff, but not dry, peaks form. Fold one-quarter of beaten egg whites into chocolate mixture. Fold in remaining whites.
6. Pour chocolate mixture into prepared soufflé dish. Place dish in a shallow roasting pan. Pour enough boiling water into pan to come halfway up sides of dish.
7. Bake until light & puffy, 15 minutes. Center will be soft & somewhat runny. For a firmer soufflé, bake 5 minutes more. Remove dish from roasting pan. Dust top with confectioners' sugar & serve.
