Preparation
Step 1
Preheat oven to 375 degrees.
Place potato slices in a microwave-safe bowl with 2 tbsp. water. Cover and nuke for about 2 minutes, until potatoes have softened slightly. Drain water and set aside.
Break each stick of string cheese into thirds, and place in a food processor or blender -- blend at high speed until cheese takes on a shredded or grated consistency. (Or tear string cheese into pieces and roughly chop.) Set aside.
In a small bowl, mix ricotta cheese with food coloring, garlic powder, and salt, and stir until blended. Mix in onion, and then evenly distribute purple ricotta mixture among muffin halves. Chop potato slices into bite-sized pieces, and evenly distribute those as well.
Sprinkle "pizzas" with shredded/grated string cheese and bacon. Place on a baking sheet sprayed with nonstick spray.
Bake in the oven for 10 - 12 minutes, until pizzas are hot and string cheese has melted. If you like, season with pepper and additional salt.
