Ingredients
- 3 Tbsps olive oil
- 2 Tbsps butter
- 3/4 cup chopped onion
- 4 cups broccoli Frozen or fresh
- 32 oz chicken broth
- 4 oz cheddar cheese
- 1/2 cup half and half
- salt and pepper to taste
Preparation
Step 1
Saute onion and broccoli in butter and olive oil until tender about 8 minutes.
Add chicken broth and remove from heat.
With a hand blender puree broccoli until desired consistency. Return to heat. Add cheese stirring until melted. Add half and half. Season to taste. Simmer for 10 minutes.
