Black Forest Bacon Wrapped Steaks with Honey Dried Fruit Glaze
Good and surprisingly easy to make!

Ingredients
- 3 TOP SIRLOIN STEAKS ABOUT 1/3 LB EACH
- 3 STRIPS BLACK FOREST BACON
- SEA SALT
- PEPPER
- HERBS DE PROVENCE
- 1 1/3 cups water
- 9 DRIED APRICOTS
- 3 LARGE DATES
- 1/8 CUP DRIED CRANBERRIES
- SEA SALT
- PEPPER
- 2 TBSP HONEY
- 1 TBSP SOY SAUCE
- PINCH GARLIC SALT
- 1/2 TSP CHILI POWDER
- 1/4- 1/2 TSP RED PEPPER FLAKES
- A FEW TBSP OF WHITE RICE FLOUR FOR THICKENING
Preparation
Step 1
Line an oven safe baking dish with foil and spray with non-stick. Sprinkle the steaks with sea salt, herbs de prov. and black pepper on all sides. Wrap each one with a strip of bacon so that the fattiest part of the bacon is resting on the top of each steak (as it cooks, it'll add flavor this way). Place steaks on foiled baking dish and cover the entire baking dish completely with foil, making sure the edges are sealed off so that heat doesn't escape while it bakes.
Turn oven on to 425 and leave the steaks in there, even before it's preheated, for about 15-18 minutes. Start working on the glaze. (Instructions below.)
After that time period, lower the heat to 325 and cook for about 30 more minutes. Now drizzle about 2 TBSP of the glaze on each steak and either serve as is or stick the steaks in there for about 10 more minutes so the glaze adheres to the steaks (making sure they're still covered with foil). There will be extra glaze, serve it with the steaks on the side :), use as a dipping sauce.
Glaze instructions:
Microwave the 1 1/3 cups water for 2 minutes. Next, add the dried apricots, dates and cranberries; microwave for 1 more minute to rehydrate the fruit. Puree all of this in a food processor.
Add the pureed mixture of water/dried fruit to a sauce pan. Add 2 pinches of salt and some pepper, the honey and soy sauce. Cook on a medium flame until it's at a very low boil, then simmer. Now add a bit of garlic salt to taste, a bit of flour for thickening, the chili powder and red pepper flakes. Simmer for about 5 minutes then remove from burner until you're ready to use it.
