Ingredients
- Shopping List & Utensils:
- 3 Baby Watermelons
- 3 Persian Cucumbers
- 15 Basil Leaves
- 9 oz Feta Cheese [solid/cubed – should be white and not too many holes and
- have only 3 ingredients: cheese milk, salt and rennet]
- 1/3 cup Green Onions
- 3 Tablespoons Olive Oil
- 1 Teaspoon Salt
- 3 Cloves of Garlic
- 2 Tablespoons Apple Cider Vinegar
- 6 Watermelon Rinds – from the 3 baby watermelons cut in half
- ??Balsamic Vinegar – I would probably add
- Jar with a Lid that will fit tightly
- Large Bowl that can hold the cubed/scoped watermelon and other ingredients
- Small Bowls to hold your other ingredients
- Measuring Spoons
Preparation
Step 1
General Instructions:
Make the Dressing First. Set Aside. Ideal to make the dressing a few hours ahead so it has time to
develop flavor.
Half each of the 3 Baby Watermelons and Cube/Scoop Out the Watermelon. Set rinds “bowls” aside.
Mix the Watermelon Salad Ingredients
Add the Dressing – Gently Mix
Add the Cheese and very gently stir mix into the salad
Place salad in the “watermelon rind/ bowls and Serve
DRESSING FOR WATERMELON SALAD:
Use a JAR, so can easily shake the dressing (and keep any left over dressing)
Combine in the jar:
3 Cloves Garlic, Finely Minced
2 Tablespoons Apple Cider Vinegar
1 Teaspoon Salt
3 Tablespoons Olive Oil
**1 to 2 Tablespoons Balsamic Vinegar** {not in original recipe}
Shake the ingredients well, set aside.
WATERMELON SALAD INGREDIENTS PREPARATION:
Cube the watermelon of the 3 baby watermelons – place in a Large Bowl and set aside
Tear the 15 Basil Leaves to Bite Size Pieces – put in small bowl and set aside
1/3 Cup Green Onions – Use both the White & Most of the Green Parts. Wash, Dry, Trim then
Slice the green onions into Finely Sliced Rings. Place in small bowl and set aside
3 Persian Cucumbers. Slice into lengthwise. Then take each half and slice – making Half Rings
{the half rings should not be too thick] – place in a small bowl and set aside
9 Oz Feta Cheese – cube into bite-sized pieces – place in small bowl and set aside
WATERMELON SALAD – MIXING THE INGREDIENTS:
Use the Large Bowl that has the cubed watermelon
ADD:
15 Torn Basil Leaves
1/3 Cup Green Onion Sliced Rings
3 Persian Cucumber Sliced Half Rings
POUR OVER THE INGREDIENTS IN THE BOWL:
Watermelon Dressing From The Jar {you may not need all of the dressing}
MIXING:
Gently Mix the Ingredients and the Dressing Together
ADD:
Feta Cheese Cubes
FINAL MIXING:
Very Gently Mix the Cheese Into the Salad Ingredients/Dressing
SERVE:
You can use your 6 “watermelon bowls” or serve in traditional bowls.
