If you are in a hurry, try this quick soak method. Sort beans, removing stones and bad beans. Rinse them. Cover 1 pound of beans with about 6 cups of water in a pan that has a tight fitting lid. The pot needs to be large enough to allow the beans to expand in size. Bring the beans and water to a boil for two minutes, cover the pan with the lid, and set aside for one hour. Drain, then cook according to your receipe.
Cooking Soaked Beans
For 1 pound of beans, bring 6 cups of water to a boil. Add beans, boil gently, uncovered 25 mintues to 2 hours, or until tender. Cooking times will vary according to types of beans used. Add water as necessary during cooking to keep beans covered.
