Ingredients
- 1 c unsalted butter
- 1 c light brown sugar
- 1 egg
- 1 tsp vanilla
- 2 tsp almond extract
- 2 1/4 flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 c ground almonds
- 5 doz whole almonds

Step 1
Preheat oven to 350.
Line 2 cookie sheets with parchment
Cream butter until it is light and fluffy and gradually beat in sugar. Beat until sugar is well incorporated. Beat in eggs. Add extracts.
Mix or sift together the flour, baking powder and a salt. Stir into batter with ground almonds. Do not overmix.
Shape dough into small balls and arrange on cookie sheets. Press each ball flat with an almond in the centre.
Bake 15-20 mins or until cookies are lightly golden. Cool on wire racks.
