Virgin Island Johnny Cake

I used to eat these all the time growing up in the Virgin Islands, simple and good. Great served fish!

Ingredients

  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup shortening
  • 2/3 cup water or milk, or enough to make dough

Preparation

Step 1

If frying, need oil and fryer. If baking you'll need a sheet pan

Mix dry ingredients together. Cut in shortening, or rub in with fingers. Add water or milk slowly, just enough to make soft dough. Knead a few times until dough is smooth and hold together. Let rest* for 10 to 20 minutes.

Shape into rounds. Flatten in your hand (real islands know the deal) or flatten out, prick with fork.

If you are frying, make sure that your oil is hot, and place in fryer. Fry at medium-high heat over stove, turning several times, until brown and crusty on both sides. it should take 15 to 20 minutes.

If baking, bake at 350°F until done.

*Resting means covering with a clean kitchen towel or just turn a bowl over the dough
