This meatball recipe is made with ground turkey and chicken and is incredibly flavorful. I served them with blue cheese macaroni, but they were also good just by themselves!

Ingredients

  • 2 large eggs, at room temperature
  • 1.5 lb ground turkey*
  • 1 lb ground chicken
  • 1 cup Panko bread crumbs
  • 1/4 cup + 2 Tbsp Buffalo sauce (reserve the 2 Tbsp)
  • 1 small onion, finely chopped
  • 1/2 cup finely grated Parmesan cheese or Parmesan cheese blend (Romano, Pecorino, etc.)
  • 2 Tbsp parsley (either fresh or dried)
  • 5 grape tomatoes, finely diced
  • 2 cloves of garlic, minced
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 Tbsp olive oil
  • I had 1.5 lb of ground turkey left over when I made this recipe. I would imagine you could use the 1 lb amounts sold in most stores and just reduce all the other amounts slightly.

Step 1

1. In a small bowl, whisk the eggs and set aside to get to room temperature. Preheat the oven to 400*F

2. Combine the ground meats, Panko, eggs, Buffalo sauce, onion, cheese, parsley, tomatoes, garlic, salt, and pepper with your hands until all ingredients are evenly dispersed. Form the mixture into 2" balls and place on a large pan (make sure the pan has edges as the meatballs will leak while cooking). You should have approximately 28 meatballs, and they can be placed very close together on the pan.

3. In a bowl, whisk together the olive oil and the reserved Buffalo sauce. Brush the meatballs with this mixture.

4. Bake in the oven for 15 minutes.
