Quinoa Greek Salad

Ingredients
- 2 c chicken stock
- 1 c quinoa
- 1 c green and red pepper diced
- 1/2 c red and green onion chopped
- 1/2 c English cucumber
- 1/2 c kalamantra olives sliced
- 3 oz Feta crumbled
- Dressing
- 1/4 c lemon juice
- 2 Tbsp olive oil
- 1/2 tsp oregano and basil
- 1 clove garlic
- pinch black pepper

Preparation
Step 1
Cook quinoa for 15 mins or until liquid is absorbed
Transfer to a large bowl and cool
Stir in veggies and cheese
Pour dressing over top and serve
