Ingredients

  • 2 Tbsp golden flax meal
  • 3 Tbsp water
  • 2 1/4 cup all purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup + 2 Tbsp OR 1 3/4 stick vegan butter, room temp
  • 1 1/2 cup sugar
  • 2 tsp molasses
  • 2 tsp vanilla extract
  • 1 cup vegan chocolate chips

Step 1

1. Preheat oven to 350 degrees.
2. Prepare your flax meal mixture. In a small bowl, mix together the flax meal and water. Allow it to sit for 10 minutes, to thicken. Line 2 cookie sheets with parchment paper.

3. Place the dry ingredients in a bowl and whisk together. Set aside. In a stand mixer, cream together the vegan butter and sugar until well mixed. Beat in the flax meal mixture, followed by the molasses and the vanilla.

4. Add the dry ingredients and mix until just incorporated. The dough will be thicker than traditional cookie dough, so don't be afraid to use your hands to mix the dough well. Stir in the chocolate chips.

5. Form the dough into 1 1/2 inch balls. Place on the cookie sheets, 2-3 inches apart. Bake for 15 minutes, rotating the cookie sheets halfway through the baking time. These cookies DO NOT TURN GOLDEN, so you really have to pay attention to the cooking time.

6. Let cool. Store in an air tight container for 1 week, or freeze for up to 6 months.
