Ingredients
- 2 cups flour
- 4 tsp baking powder
- 1/2 tsp salt
- 1 cup sugar
- 1/8 tsp cinnamon
- 1 tbsp brown sugar
- 2 cups grated carrots
- 1/4 cup raisins or walnuts
- 1 cup milk
- 1 egg
- 2 tbsp salad oil

Preparation
Step 1
Sift flour, baking powder, salt, sugar and cinnamon. Add brown sugar, carrots and raisins. Toss to blend. Beat eggs, milk, oil together. Add this to the first mixture. Stir until all is mixed. Drop into cups. Bake at 400 degrees for 20-25 minutes or until top springs back.
