Ingredients
- 2 T. vegetable oil
- 1 medium onion, chopped
- 4 cloves garlic, chopped
- 1-3/4 pounds cabbage (about 1/2 head) shredded
- 5-6 potatoes, peeled & cut into 1/2 inch cubes
- 2 celery stalks, cut into 1/2 inch slices
- 1 quart of water
- 2 quarts canned chicken broth or home made stock
- 1 bay leaf
- 1-1/2 t. dried thyme
- 1-1/2 t. salt
- 3/4-1 pound smoked sausage such as kielbasa, cut lengthwise & sliced crosswise
Preparation
Step 1
In a large pot heat the oil over medium heat. Add the onions & garlic & cook until translucent about 5 minutes.
Add cabbage, potatoes, water, broth, bay leaf, thyme, celery and salt to the pot. Reduce heat and simmer, partially covered & stirring occasionally, until the cabbage & potatoes are tender, about 20 minutes.
Cooked sliced sausage in a seperate frying pan until browned, 5-6 minutes. Remove sausage from the pan and drain on paper towels. Just before serving remove the bay leaf from the soup and add the sausage.
