Wild Mushroom Soup

  • 1/2 lb wild mushrooms
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 quarts chicken broth. 6 cups
  • 1 can cream of mushroom soup
  • 1/2 cup heavy cream
  • Chopped parsley

Preparation

Step 1

Wash mushrooms and chop finely. Saute them in butter until fairly soft. Sprinkle with the flour, constantly stirring. Add the chicken broth gradually and simmer for 1/2 hour. Add mushroom soup. Simmer for 2-3 minutes. Add cream. Heat thouroughly but do not boil. When ready to serve, pour into bowls and top with chopped parsley. Serves 6-8.
