
Ingredients
- 4 Roma tomatoes or grape/cherry tomatoes halved
- 1 large green pepper
- 1 large mild onion red
- 1-2 english cucumbers
- 1/2 cup feta cheese (Rectangles to be placed on top for presentation.)
- 1/2 cup greek olives (Kalamata)
- Salt and pepper
- Few lettuce leaves
- Dressing below or use store bought brands.

Preparation
Step 1
Spiralize cucumbers. Chop vegetables. Place lettuce in bottom of salad bowls. Sprinkle feta cheese or leave in rectangle blocks on top, olives and salt and pepper on vegetables and refridgerate.
Dressing
1 cup olive oil
2 1/2 tbsp white wine vinegar
Juice of 1/2 small lemon
1/4 tsp dijon mustard
Salt
1/4 tsp pepper
1/2 tsp basil
2 tbsp parsley
1 clove garlic minced
1/4 tsp italian seasoning
Combine in jar and shake well.
