  • 1/4 cup dried cranberries
  • 1/3 cup port
  • 4 oz diced bacon

Step 1

Combine cranberries and port. Simmer in saucepan until hot and then let stand to absorb port. Cook bacon and put on paper towel.
Leave 1 tsp of fat in pan and add 2 minced shallots and 1 tsp of minced garlic. Cook 1 minute over medium heat. Turn heat to low and add 2 tbsp of honey, 1/2 cup of red wine vinegar and whisk in 1/4 cup of olive oil for 5 minutes until creamy. Salt and pepper to taste.

Place 1/4 cup flour, 1/4 cup bread crumbs, 1 beaten egg in separate bowls. Cut 4 oz of goat cheese round into 4 equal parts. Dip cheese in flour, then egg and then crumbs to coat all. Warm vegetable oil on medium low heat. Add rounds and brown. Divide 6 oz of spinach on 4 plates. Warm vinegrette over med heat and whisk. Drizzle over spinach, top with rounds of cheese, almonds, cranberries and bacon. Serve immediately.
