BJ's White Cheddar Mashed Potatoes ****

Ingredients

  • 2 large russet potatoes
  • 1 cup white cheddar cheese, shredded
  • 3/4 cup heavy cream
  • 1/4 cup butter
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Preparation

Step 1

Peel and quarter potatoes. Boil potatoes in 6-8 cups of water in a large pot for 30-40 min or until soft. Strain potatoes, then add them back to the pan and mash thoroughly.

Add cheese, cream, butter, salt, and pepper and heat over med/low heat, stirring often, until thick.
