Ingredients
- 3 cups diced, cooked chicken
- 2 celery ribs, diced
- 1 small onion, peeled and chopped
- 1 ripe avocado, peeled, seed removed and diced
- 1 2 1/4 ounce can sliced black olives, drained
- 2 tablespoons minced green chiles
- 1 cup Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix, prepared
- 2 tablespoons chopped cilantro
- 2 tablespoons freshly chopped parsley
- 1 teaspoon freshly squeezed lime juice
- 1/2 teaspoon ground cumin
- 12 large lettuce leaf cups

Step 1
1. In a bowl, combine the chicken, celery, onion, avocado, olives, and chiles and stir until well blended. 2. In another bowl, whisk together the dressing, cilantro, parsley, lime juice, and cumin until emulsified. 3. Pour the dressing mixture over the chicken and toss until evenly coated. 4. Divide the mixture evenly between the lettuce cups.
