David Venable's Asian Slaw with Peanut-Soy Dressing

Pot stickers are one of my favorite appetizers and The Perfect Gourmet makes a mean pot sticker! This recipe is the perfect salad to accompany these Asian treats, as it has a delicious peanut soy sauce dressing that also doubles as a dipping sauce.
Tip: Follow the package instructions when making the pot stickers. If you're using the dressing as dipping sauce, double the recipe. Otherwise you'll be left wanting more!

Ingredients
- Dressing:
- 3 Tbsp rice wine vinegar
- 3 Tbsp olive oil
- 1 tsp sesame oil
- 1/2 tsp lemon juice
- 3 Tbsp creamy peanut butter
- 1-1/2 Tbsp soy sauce
- 1/2 Tbsp brown sugar
- 1-1/2 Tbsp fresh ginger root, minced
- 1 Tbsp garlic, minced
- Slaw:
- 1 cup red cabbage, thinly sliced
- 3 cups Napa cabbage, shredded
- 3/4 cup carrots, julienned
- 1/4 cup red onion, thinly sliced
- 1/3 cup red bell pepper, thinly sliced
- 1/3 cup snap peas, julienned
- 1/4 cup green onions, julienned
- 1/4 cup fresh cilantro, chopped
- 1/2 Tbsp sesame seeds, toasted (optional)
Preparation
Step 1
To prepare the dressing, whisk all the ingredients together in a medium-size bowl and set aside.
To prepare the slaw, combine all the ingredients in a large salad bowl. Toss with the dressing just before serving.
