Ingredients
- 2 lbs Baby Boomer potatoes
- 1/3 cup Dijon mustard
- 2 tbsp olive oil
- 1 clove garlic chopped
- 1/2 tsp Italian seasoning
Preparation
Step 1
Parboil potatoes for 10-15 min. Mix all other ingredients in a bowl, then toss in potatoes.
Place in a greased baking sheet and bake at 425 degree F for 15-25 min.
Serves four.
