Quick French Toast with warm blueberries & Greek Yogurt

A quick, delicious and nutritious breakfast

Ingredients
- 2 slices sandwich bread
- 1 egg
- 1/4 cup low fat milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 2 teaspoons unsalted butter
- 1/4 cup wild Maine blueberries (fresh or frozen)
- 1 teaspoon maple syrup
- 2 heaping spoonfuls Cabot Vanilla Bean Greek Yogurt

Step 1
Whisk egg, milk, vanilla and cinnamon and pour over bread to soak.
Heat skillet over medium heat and melt butter. Fry each side about 2 minutes or until golden brown. Meanwhile, warm blue berries in microwave on 50 % power (1 minute for frozen berries- time varies depending on your microwave oven power). Mix maple syrup with the berries and spoon over top of French toast. Finally, place 2 dollops of Greek yogurt on top and serve immediately.
