Zucchini Casserole

Ingredients

  • 2 pounds ground beef
  • onion (only if wanted)
  • 1 cup of rice per pound of meat
  • 4 average zucchini
  • 1 1/2 bottles of tomato juice (large)
  • 1 can beef broth
  • salt (to taste)
  • pepper (to taste)

Preparation

Step 1

Brown beef (add onions if desired), drain fat, add rice, zucchini, tomato juice and beef broth. Add salt and pepper to taste. Simmer until rice is done.
