Zucchini Casserole

Ingredients
- 2 pounds ground beef
- onion (only if wanted)
- 1 cup of rice per pound of meat
- 4 average zucchini
- 1 1/2 bottles of tomato juice (large)
- 1 can beef broth
- salt (to taste)
- pepper (to taste)

Preparation
Step 1
Brown beef (add onions if desired), drain fat, add rice, zucchini, tomato juice and beef broth. Add salt and pepper to taste. Simmer until rice is done.
