Ingredients
- 1 prepared pizza dough from the deli (I used garlic flavored pizza dough by Portland Pie Co.)
- Olive oil cooking spray
- 1 tablespoon olive oil
- 1 1/2 teaspoons Italian seasoning
- 5 tablespoons of unsalted butter, divided
- 1 shallot
- 6 cloves garlic
- 24 medium raw shrimp, de-veined, tail off
- 1/2 tablespoon lemon juice
- 2 tablespoons all purpose flour
- 1 cup milk
- 1/2 cup fresh grated Parmesan
- 1 cup shredded mozzarella
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 6 fresh basil leaves

Preheat oven 425 degrees
Bring the refrigerated dough to room temperature (about 30 minutes). Stretch dough to fit 16 inch pizza pan sprayed with olive oil cooking spray. Brush dough with olive oil and sprinkle Italian seasoning all over. Blind bake pizza crust 10 minutes or until it is light golden brown.
Next, Chop the shallot and garlic cloves to a fine mince. Melt 3 tablespoons butter over medium heat in a saute pan. Cook shallot until translucent (1-2 minutes). Add the garlic and saute 1-2 minutes. Add the shrimp and saute until just pink. Squeeze lemon juice over the shrimp and remove to a plate to rest. Meanwhile, prepare the sauce by melting 2 tablespoons butter over medium heat in the same pan the shrimp cooked in. With a fork whisk in 2 tablespoons flour and cook for about 30 seconds. Slowly add the milk, whisk and cook until thickened (about 3 minutes). Remove from the heat. Mix in freshly grated Parmesan cheese and add the shrimp to the sauce. Season with salt and pepper. Spread over the pizza dough and top with Mozzarella. Bake 5 minutes or until cheese is melted. Top with torn basil leaves.
