Parmesan Chicken Salad

When you blend Parmesan, garlic, toasted pecans, and spicy brown mustard with chopped chicken, you get one fabulous chicken salad. It's even better the second day.

Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons vegetable oil
- 3/4 cup freshly grated Parmesan cheese
- 1/2 cup chopped pecans, toasted
- 1/2 cup chopped celery
- 1/3 cup chopped green onions
- 3/4 cup mayonnaise
- 2 tablespoons spicy brown mustard
- 1 garlic clove, pressed
- Garnish; curly leaf lettuce

Preparation
Step 1
Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over high heat 7 to 8 minutes on each side or until done; cool. Chop chicken.
Stir together chopped chicken, cheese, and next 3 ingredients.
Stir together mayonnaise, mustard, and garlic. Add to chicken salad; stir well. Cover and chill, if desired. Garnish serving plate, if desired.
