Corn Fritters

These scrumptious corn fritters are easily made using Jiffy's corn muffin mix. Best served warm but to reheat, put on a greased baking sheet. Cook in the oven at 350°F for 15 minutes. They won’t be greasy like fresh fritters, but they’ll still taste good.

Ingredients
- 1 box Jiffy corn muffin mix
- 1 egg
- 1/3 cup milk
- 1/2 can corn, drained
- 1/2 teaspoon pepper
- Canola oil
Preparation
Step 1
Heat oil in a fryer or pot on the stove to 350°F.
Combine muffin mix, egg, milk, corn, & pepper in a medium bowl.
Drop large tablespoonfuls, or a cookie scoop, of batter in oil. Let cook a couple minutes per side. Drain on a paper towel.
Wrap leftovers in a paper towel & put in a Ziplock bag.
To reheat, put on a greased baking sheet. Cook in the oven at 350°F for 15 minutes. They won’t be greasy like fresh fritters, but they’ll still taste good.
