Ingredients

  • 1 pound boiled shrimp, peeled and deveined
  • 2 stick unsalted butter, softened
  • 2 green onions, chopped
  • 4 whole cloves garlic, peeled
  • 3 tablespoons sherry or sweet wine such as sake or white Zinfandel
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 tablespoon plus 1 teaspoon chopped fresh parsley

Step 1

1. Place shrimp in the bowl of a food processor. Pulse a few times until shrimp are finely ground.
2. Add butter, green onions, garlic, sherry, lemon juice, salt, white pepper, and 1 tablespoon of parsley. Process until all ingredients are thoroughly blended to the consistency of a smooth spread.
3. Spoon into glass ramekins and sprinkle remaining parsley over top for garnish.
4. Cover and refrigerate for at least 2 hours. Remove from refrigeration 30 minutes before serving to that it will be easy to spread.
