Use whole oatmeal for fibre filled chewy and chunky cookies or blend oatmeal in blender until fine powder for softer cookies. My favourite is raisons, nuts, chocolate chips and cranberries and leave out the bar.

Ingredients

  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp soda
  • 1/2 tsp salt
  • 1 tsp b. powder
  • 2 1/2 cups oatmeal
  • 1 1/2 cups chocolate chips
  • 1/2 8oz hershey bar (grated) or 1/2 cup raisons
  • 1 1/2 cups of chopped nuts, raisons or dried cranberries
  • You can decide on the amount of additions as you mix with batter.

Preparation

Step 1

Cream butter and sugars. Add eggs and vanilla. Add flour, oatmeal, salt, b. powder and soda. Blend and then stir in chips , bar and nuts.
Roll into balls and place two inches apart on cookie sheet. Put in fridge for 15 min. Bake for 10 minutes at 375. If freezing balls, then the frozen balls bake for 14-17 minutes. Store in freezer for up to 3 months and take out and bake a few as desired. Fabulous cookies but do not over bake or they will be crispy. Makes 5 dozen.
