Ingredients

  • 4 cups cold water
  • 1 onion, sliced
  • handful of celery tops
  • 1/2 teaspoon salt

Preparation

Step 1

When preparing turkey for roasting, wash turkey neck and giblets(heart, gizzard, liver). Place neck, heart, and gizzard in medium-size saucepan with the above ingredients.

Cover; bring to boiling, simmer about 2 hours, or until gizzard is tender. Add liver during last 20 minutes cooking.

Drain, measure stock; add water to make 4 cups liquid; reserve.

Chop giblets; reserve.

When turkey is cooked, remove from roasting pan. Tip pan; pour off fat and reserve, leaving drippings in pan.

Blend thoroughly with drippings in pan:

1/2 cup reserved turkey fat
1/2 cup all-purpose flour
Slowly add, stirring constantly:
Reserved giblet stock
Bring to boiling, stirring constantly.
Stir in:
Reserved chopped giblets
Simmer 5 minutes.
Season to taste.

Makes 4 cups gravy
