Ingredients
- 3 medium sweet potatoes
- 1 tablespoon extra virgin olive oil
- 2 teaspoon water
- 1 cup cooked chickpeas
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1/4 teaspoon lemon zest
- 1/4 teaspoon ground cumin
- 1/4 tablespoon ground coriander
- sea salt and pepper to taste
Preparation
Step 1
Heat oven to 400°F.
Poke holes in potatoes and bake for 45 minutes or until soft. Let cool. Combine all ingredients in a food processor. Pulse mixture until smooth and creamy.
