Almond Chicken Casserole

Ingredients

  • 2 cups cubed cooked chicken
  • 1 can (103/4) condensed cream of chicken soup
  • 1 cup sour cream
  • 3/4 cup mayonnaise
  • 2 celery ribs, chopped
  • 3 hard cooked eggs chopped
  • 1 can (8 oz) water chestnuts, drained and chopped
  • 1 can (4 oz) mushroom stems and pieces, drained
  • 1 tbsp finely chopped onion
  • 2 tsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed cornflakes
  • 2 tbsp butter, melted
  • 1/4 cup sliced almonds

Preparation

Step 1

DIRECTIONS:
In a large bowl, combine the first 12 ingredients. Transfer to a greased 13 X 9 X 2 inch baking dish. Sprinkle with cheese. Toss cornflakes with butter. Bake uncovered at 350 for 25-30 minutes or until heated through.
Yield: 6-8 servings
