Ma maw's Dorito Beef Casserole

Ingredients
- 1 - 1 .5 lbs ground beef or chuck, browned
- 1/4 - cup onion, chopped
- 1 - clove garlic, minced
- 1 - 2 teaspoons chili powder
- 1/2 - package (16oz) Doritos corn chips
- 1 - (15 oz) can ranch style beans or bush's chili beans
- 1 - (10 oz) can mild Rotel tomatoes
- 1 - (10 oz) can cream of chicken soup
- 2 - cups Mexican style cheese blend

Preparation
Step 1
Preheat oven to 350 degrees. In a large skillet brown the ground beef with onion and garlic. Drain any grease.
Add the ranch style beans and chili powder; mix to combine and set aside. In a separate bowl combine the soup and the Rotel tomatoes together and set aside.
Place a layer of slightly crushed Doritos in the bottom of a greased
Add half of the ground beef mixture and half of the soup mixture. Top with 1 cup of shredded cheese.
Repeat layers a second time ending with the remaining shredded cheese. Place in a 350 degree oven and bake for 30 - 35 minutes or just until hot and bubbly around the edges.
You know how this stuff goes around my house!!! Never any left overs!!! I like adding the spicier Doritos for a little kick! YUM!
Wow…this looks really nice. Add some cooked potatoes, and then I will eat it as my dinner. :)
I'm not crazy about beans, so I used 1/2 a can and added cumin and1 cup of good quality frozen corn and a small can of sliced black olives. Worked out real well!
This is so good and we make it using the entire bag of chips, crushed. Also use 1&1/2 lb. ground beef. If you want to save time & steps : brown meat w onions & drain, return to skillet. Add beans, soup, Rotel tomatoes, garlic, chili powder. Mix well and let cook till bubbly. Crush chips and place in bottom of dish. Pour meat mixture over chips & top
I make this recipe but use refried beans , its delish whole family loves it very rare to gave leftovers but if we do they dont last.
NACHO CHEESE DORRITIS ARE JUST AS GOOD. I DO THE REGULAR DORRITOS. YOU CAN USE GROUND CHICKEN IN PLACE OF THE GROUND BEEF. PLUS I USE VELVETA CHEESE IT MELTS BETTER. WHEN OUR GROWN KIDS ARE HOME I USE THE ORIGINAL ROTEL TOMATOS. IT GIVES IT A REAL KICK.
This was a hit at my house. I had to make from scratch the ranch style beans because in Canada it is not stocked in grocery stores. I used cool ranch doritos and soup of celery because that is what I had on hand. I served this casserole over a bed of thinly sliced romaine,diced tomatoes,cucumber and olives. Drizzled with some garlic and bacon ceasar dressing.
