  • 1/8 teaspoon(s) salt
  • Freshly ground black pepper
  • 1 medium tomato, seeded and finely chopped
  • 3 tablespoon(s) pitted Kalamata olives, finely chopped
  • 1 teaspoon(s) olive oil
  • 1/2 teaspoon(s) balsamic vinegar
  • 1 tablespoon(s) thinly sliced fresh basil
  • 1 tablespoon(s) thinly sliced parsley

Preparation

Step 1

In medium bowl, with fork, mix white part of onion, goat cheese, thyme leaves, fennel seeds, salt, and 1/8 teaspoon pepper.
In small bowl, combine tomato, olives, olive oil, balsamic vinegar, green parts of onion, and 1/4 teaspoon pepper. (Both cheese mixture and tomato mixture can be refrigerated separately, covered, up to 1 day.)
Divide cheese mixture among shells. Top with tomato mixture. Garnish with basil and parsley.
