Marinated Vegetable Salad

Ingredients

  • Combine in sauce pan and bring to a boil, then cool, the following:
  • 1/2 cup oil
  • 3/4 cup white vinegar
  • 1 cup sugar
  • 1 teaspoon black pepper
  • Drain the following and put in a large bowl to mix:
  • 1 can French style green beans
  • 1 can shoe peg corn or white corn
  • 1 can small English peas
  • 1 small jar pimentos
  • Add following to bowl:
  • 3 ribs chopped celery
  • 1 bell pepper, chopped
  • 1 large purple onion, chopped

DIRECTIONS:
Pour cooled vinegar-dressing over all vegetables, mix very well, refrigerate 6 hours or overnight before serving.
