Crunchy Broccoli Salad

Ingredients

  • Dressing:
  • 1 cup oil
  • 1 tbsp soy sauce
  • 1 cup sugar
  • 1/2 cup red wine vinegar
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • Whisk together. Set aside.
  • Salad:
  • 1 cup chopped walnuts
  • 1 3 oz. pkg. ramen noodles, uncooked and crumbled (discard flavor packet)
  • 4 tbsp butter
  • 1 bunch broccoli, chopped
  • 1 head romaine lettuce, torn into bite-sized pieces
  • 4 green onions, sliced

Preparation

Step 1

Sauté’ walnuts and noodles in butter until light brown. Drain on paper towel. Set aside. In a large salad bowl, combine broccoli, lettuce and onions. Sprinkle walnuts and noodles over salad and toss with the dressing. Makes 8 to 10 servings
