Tennessee Caviar

Ingredients

  • 2 15 oz black eye peas
  • 2 15 oz black beans
  • 1 15 oz whole kernel corn
  • Place all items in a colander and rinse well. Washing away the sodium.
  • Add
  • 1 15 oz diced tomatoes
  • 1 16 oz salsa (mild, medium or hot)
  • 1 pkt of Good Season Italian Dressing, (mix oil and vinegar as instructed on the packet.)
  • 1 small can of chopped green chilies
  • 1 chopped green pepper
  • 3 cloves of garlic
  • Big splash of balsamic vinegar

Preparation

Step 1

Mix well.
Will keep in the refrigerator for several days.
